Sounds like you need to boil the heck out of them and add something to help remove the musky odor from their glands they have. I hear the glands when squeezed smell like skunk.

Wife and I are headed to south texas for our anniversary this summer. We are taking a day to hunt javelina's just east of Laredo. Neither of us have taken a javelina before, looking foward to it.
