One of my favorite and most satisfying thing to do.
I know these guys have been eating nothing but wild natural food.
20 miles from any farmers fields.
Deer was made in to burger and the bear in to summer sausage and jerky.
I have some out to be made in to pepperettes...
I know my buddy is looking down on me and smiling. He always loved every aspect of processing game...

Eight delicious summer sausage sticks ready for eating.
I use half the cure they give with the package and refrigerate or freeze what I'm not going to eat right away.
If all the cure is used it's so salty it's almost too salty to eat...

I process all my own too. Next on my to try list is Brats.
Ive never tried making summer sausage or snack sticks before. Planning on doing the snack sticks next deer season. All this year's deer has already been processed now. Those sausages look good.:)
Definitely can relate to that.
In my youth, I used to help my dad cutting up and processing the home-butchered sheeps and rabbits.
The killing fealt strange, but I loved the knive-work ...

Looks great!! You guys are making me hungry. Nothing better than making your own. I love making jerky and summer sausage. A lot of fun to see it go from the field to something that everyone loves to snack on.
