Oe as I call it, Easy Goose Pastrami, I just dry cure it cover it with Onion and garlic powder and as much Tbale grind black pepper as it can stick. Curing removes all the gamey taste from wild goose. People like cured goose better than cured venison. Eve people that won't each wild goose like this.
